New requirement

New food regulation introduced by the food control department of Dubai Municipality requires all food establishments to appoint at least one person in charge (PIC) trained and certified in food safety. The pic shall be the primary link between the department and the food establishment.

All food establishments should ha ve a trained and certified PIC by December 2011.

who should be trained and certified to be a PIC? 

  • the person nominated as the PIC should be the owner of the business or a designated person, such as;
  • manager of the business
  • shift leader
  • chef
  • kitchen manager or similar individual who is always present in the work site and has direct authority
  • control or supervision over employees who engage in the storage, preparation, display, or service of foods

who is a person in charge?

The person in charge (PIC) shall be the person who has the overall responsibility to ensure food safety in an establishment. The pic will be accountable t o the government for making sure that they and the employees are following the regulations of Dubai Municipality. If there are multiple shifts, the PIC will be responsible for the proper functioning of the food establishment’ s operation for a limited time ( the work shift).
